I have to give props to a good friend of mine for coming up with this recipe. Ash, you are probably one of the most creative people I have ever met. Also, you saved me at lunch today because my kids loved it!
Back story, the true recipe creator was actually attempting to make a spaghetti sauce but it ended up a soup. I'm not even mad it got all wonky, because she created this amazing-ness. I have always been a tomato basil girl. I would pay the $8 bucks at Panera for a good soup on any day! I can say that this recipe hit it out of the park!
28oz can Whole Tomatoes
28oz Crushed Tomatoes with Basil
1 jar of Roasted Red Peppers
1/2 Cup Heavy Whipping Cream
I drained the red peppers and combined all the canned tomatoes, onions, garlic, seasonings (use what you like, and use as much as you like) into a big pot. Cook until soft and use an immersion blender to puree all the ingredients. Add heavy whipping cream and stir until completely combined.
For fun I made grilled cheese sandwiches and a small fruit salad to go with it for lunch, and it was a complete hit with my kids!
