Crockpot Enchiladas

I made a Tik Tok and it was a hit!!!

These Crockpot Enchiladas are always a hit in my house, and you can literally make them your own!

I didn't provide the ingredients because honestly, I didn't know it would take off like it did BUT here we are!!


  • Chicken Breast ( use what you need, I did six in the video because we save left overs for lunch the next day)

  • 1/2 yellow/red bell pepper

  • 1 whole onion

  • Seasoning (salt, pepper, cumin, chilli powder, paprika, garlic and onion powder) (add as much or less MAKE IT YOUR OWN)

  • Enchilada Sauce (one can!)

  • Tortilla (reg or corn)

  • Cheese (we used mexican blend)

Crockpot everything except cheese and tortilla on high for 4 hours!!

Take chicken out and shred (pro tip: use a KitchenAid or hand mixer to shred)

Put shredded chicken back into pot, and stir til combined. Add a couple hand fulls of cheese and sliced tortillas of choice. Mix again until well combined.

Top with cheese, and put crockpot on warm until cheese is melted!


I added some plain white rice, but I have also done taco with crunchy shells!
